Papillotte of John Dory with Citrus & Fennel

Ingredients

4 x 180gr fillet of John Dory
1 bulb of fennel
1 bunch of fresh thyme
1 lemon
1 orange
1 lemon
Extra virgin olive oil
White wine
Salt & pepper

Method

1. Cut the fennel in half then slice finely. Cut slices of the orange, lemon and lime.

2. Tear a large piece of aluminium foil and on one half, place some of the fennel then the fillet of John Dory followed by one of each citrus and a sprig of thyme.

3. Add a splash of olive oil and white wine and season with salt and pepper.

4. Fold the foil in half and close by twisting the edges together.

5. Place in the oven at 180ºC for about 8 minutes or until the bag has blown up

6. Tear the bag open, dig in and enjoy!
