1 cup quinoa
200g chicken breast, steamed
2 cups sweet potato, steamed lightly
2 cups broccoli, steamed lightly
½ red onion, finely sliced
1 tsp white wine vinegar
2 garlic cloves
1 tbls orange rind, grated
Juice from half an orange
A handful of mint
Place the chicken breasts on a plate that fits into a steamer and steam over simmering water for 12 minutes. Set aside to cool then shred or slice finely. Cook your quinoa following manufacturer’s instructions. Set aside to cool. Meanwhile steam your veggies until just tender then cool slightly. Make your dressing by mixing together the vinegar, garlic, orange rind and juice. In a bowl gently mix together the quinoa, chicken, veggies and mint. Pour the dressing over the top.
